Chili Chocolate No-Bake Cookies

#2: I LOVE CHOCOLATE, and I love chili chocolate like a kid loves eating playdoh.
#3: The ingredients are all long-lasting so I almost always have them on hand to make when I get a craving. No eggs or butter.
#4: <10 minutes and I’m chomping away on cookies, happy.

Some recipe changes I make that put these over the top for me:
- Leave out the coffee
- Add in cayenne pepper – I don’t measure, but definitely do some generous shakes. Start on the lower end and you can always add more in your next batch.
- I rough chop the chocolate chips, and use 68% organic dark cocoa choc chips from PCC
- If I’m feeling nutty I add in some chopped nuts (pecans or walnuts). Delicious.
- I cut the sugar by 1/3rd. Haven’t tried a substitute but I think I will next time.
End result (pre-refrigerator):
Once you have your cookies mixed and made, pop them in the fridge for the coconut oil to firm up. Not without eating one first though!
