Chili Chocolate No-Bake Cookies

These dense, spicy, dark-chocolate treats are my most favorite thing to make these days for so many reasons…

#1:  Look here

#2:  I LOVE CHOCOLATE, and I love chili chocolate like a kid loves eating playdoh.

#3:  The ingredients are all long-lasting so I almost always have them on hand to make when I get a craving. No eggs or butter.

#4:  <10 minutes and I’m chomping away on cookies, happy.

I got the initial recipe from Chocolate Covered Katie’s blog. You can find the original recipe there!

Some recipe changes I make that put these over the top for me:

  1. Leave out the coffee
  2. Add in cayenne pepper – I don’t measure, but definitely do some generous shakes. Start on the lower end and you can always add more in your next batch.
  3. I rough chop the chocolate chips, and use 68% organic dark cocoa choc chips from PCC
  4. If I’m feeling nutty I add in some chopped nuts (pecans or walnuts). Delicious.
  5. I cut the sugar by 1/3rd. Haven’t tried a substitute but I think I will next time.

End result (pre-refrigerator):

plateful of cookies

Once you have your cookies mixed and made, pop them in the fridge for the coconut oil to firm up. Not without eating one first though!
